Ganzo is the creative educational laboratory of the Apicius school, together with FEDORA, a creative pastry shop. It combines local and international cultural realities and disseminates their learning. Ganzo is a restaurant, wine bar, café, but also art gallery, library, creative and educational workshop.

Description

Ganzo is the creative laboratory of APICIUS International School of Hospitality. Ganzo is a school restaurant that reinterprets Italian cuisine from an international perspective, open to the public and operated by the students and faculty of Florence University of the Arts through experiential learning. The wines featured at Ganzo represent specialty Italian wine producers who are a part of institution’s partnership with industry professionals, APICIUS FRIENDS.
