Culinaria was founded by the De Gustibus association, which had created a network of small producers, selected over the years following the criterion of shared guarantee, organic and biodynamic with which, even today, collaborates both for the supply of products for bistro and for the organization of food and wine tours. Many of these producers, with their families, are today friends more than customers!
We are inspired by the small family shop, where mom teaches us to set and keep the kitchen tidy; Father brings us the selected and fresh products of the season, and we children take care that the room is ready, the satisfied guests and the cellar provided. We transform the raw material and bring our experience to the table, we are artisans in the kitchen. Around Piazza Tasso, the heart of San Frediano, there is a neighborhood of shops and people who love to create, build, devote themselves to the simple art of making. As well as us, we combine the passion of quality raw materials, the curiosity towards the influences of the Mediterranean and a good dose of healthy tradition. Andrea & Tommaso. The Chef Ercole Fragale born in 1976. Fiorentino of the San Frediano district, is formed in the renowned Buontalenti hotel school. Hence the first experiences in the historical Florentine and Oltrarno trattorias, up to the acknowledgments and satisfactions of the "big kitchens" of the luxury world. Hotel Metropol in Venice, Paul Bocuse in Lyon (3 Michelin stars) are some of the stages of his adventurous journey. Today it faces a different challenge, that of the Culinary Bistrot. Together with his brothers Andrea and Tommaso Buzzegoli he decided to go back home. He chose to stop in a place close to the heart, which every day promises to its patrons and friends a journey, a unique experience. We start from the careful selection of raw materials and the experiences made over the years around the world to give rise to new discoveries and amazements.
