Ganzo is a laboratory of taste where learning is a key ingredient that we experiment. Professional and cultural experiences come together at Ganzo, the internship center for Apicius Culinary, Hospitality, and Wine Studies students. The association's objective to promote cultural integration finds its core in Apicius students, who have the opportunity to interact only a daily basis with the Italian and foreign communities in Florence while putting into practice concepts learned in the classroom during their studies abroad.

Whether you are ordering a meal, a glass of wine or an espresso, or asking about memberships and events at Ganzo, you are sustaining through direct interaction an Apicius student's technical skills, potential, communication, and overall experience in Florence, Italy.

Ganzo's staff is made up of an international team of professionals and Apicius students who collaborate to offer a space for cultural exchange to the Florentine public through the plate and palate. Each area is coordinated by a senior staff or Apicius faculty member who guide participating students throughout their experience at Ganzo and seek to communicate together the “tastse” mission of associaton: merging communities and cultures by blending flavors, aromas, wines and beverages, and most importantly both traditional and contemporary gastronomic approaches to Ganzo's international menus.

Ganzo Meal Plan Information

Looking for a convenient and affordable way to taste Ganzo's fine dining experience?
Members of the public, Palazzi students, staff, and faculty may purchase Ganzo meal plans that can be used everyday, all day long!

Meal plan holders may use vouchers at Ganzo all day until 8:30PM. Each voucher includes:
Lunch (one voucher): 1 main dish, homemade bread, and water.
Dinner (two vouchers): 1 main dish, homemade bread, 1 appetizer or dessert, and water.

Lunch is served from 12:00PM until 3:00PM (last orders taken at 2:30PM), however a selection of courses, salads, appetizers and desserts will be served all day long. Students may use the vouchers at any time of the day.

Dinner vouchers may be used from 6:30PM until 8:30PM (last orders taken at 8:00PM)

Ganzo is a great location for private events, conveniently located in the historic city center of Florence in the lively S. Ambrogio neighborhood.

Either part or all of the associaton's location can be booked at no extra rental charge.

Services that Ganzo staff can offer for private events may include:

Assistance with event organization, menu planning and execution, and staffing.

I wish there were Italians who ate there. I mean other than the teachers, who get a discount. It is for the american students, the lights are bright, the music too loud, the food over priced, and the quality usually not very good. The students in the kitchen dont look like they even get to cook. Just watch the paid help. dishes are designed nicely though. but not worth all the hassle of being there. Manager not very professional as well. Place has potential if changed some of the fundamental things.

Hei, it was full of American students! Anyway, nice place with experimental dishes.... We enjoyed the night, even if...they were really loud (and place is quite small..) and even if the food wasn\'t the best ever (but good quality and ..good design!). The area around amazing. We also enjoyed a lot the Creativity Festival event in Florence...
